Mia's Christmas Salad

Ingredients: 1 head frisee;
1/2 head radicchio;
small chunk of ricotta salata;
1 whole orange, sliced into rounds;
1/2 cup cooked peas, chilled;
4 slices thin pancetta, bacon, or prosciutto, cooked until crispy;
handful of unpitted green olives, firmer variety;
handful fresh basil, torn;
salt;
fresh ground black pepper;
lemony vinaigrette


1. Combine frisee and radicchio; toss with vinaigrette.
2. Cook the bacon until crispy and set aside to drain.
3. Plate the salads. Dress each with remaining ingredients, including 2 strips of bacon each, and more vinaigrette.
4. Season with salt and black pepper; sprinkle over basil leaves.
Serves 2.
