I can't believe you MADE YOUR OWN RICOTTA! It looks so good and fresh. Thanks for this post. It is really informative and it made me realize that I don't use ricotta nearly enough. I only buy it about 4-6 times a year when I find a recipe that calls for it. In fact I just used some for my Eggplant Ricotta Bake.

OK, so the URL is to my watch site. :) I need all the internet advertising I can find. :) Hey, so I LOVED the ricotta blog. I forgot about all the ways that it's used. Do they make ricotta with sheep or goat milk in Italy or is it strictly cow's milk? I only ask because Sandi has that milk allergy. That appetizer looks wonderful, and I did taste Dad's ricotta, and it was much creamier and tastier than the stuff you get in stores. Luckily, that stuff isnt available otherwise I'd be quite a bit heavier. :) Anyway, great post. Love the pics and the ideas for uses of ricotta. Keep it coming!

Hi Cathy from Flushing :) ... Nice to hear from you! I won't be in NY for awhile unfortunately. I'm going to Thailand for almost a month though! I'll have lots to tell when I'm back.
I think that in Italy you can buy ricotta made from cow, goat, sheep and buffalo milk ... so Sandi has a lot of choice!

Thanks so much for the Italian ricotta recipe! When we were in the states, my husband used to make it with buttermilk (he even wrote about it: http://bootsintheoven.typepad.com/boots_in_the_oven/2006/05/make_it_again_f.html) , but we can't find buttermilk here in Florence. We will definitely be making it with lemon juice, as it's so much better homemade!
