Grilled Onion, Potato, and Raclette Pizza

gets some yummy in that tummy!

I usually make my own pizza dough but when I came across this very good looking prebaked pizza crust at the store, I jumped at the chance to spend the time creating a topping instead. The crusts were prebaked with a smearing of tomato, so I know Italians were at work here. That provides a nice base. All that's left to do is season it, top it, and grill it.

This pizza was soooo tasty and filling -- it can easily serve 2 for dinner with a side salad. You have to try it. The garlic softly accented and melded with the potatoes and sweet onions, and the melted raclette brought the whole ensemble together. How many times can one say Yum?

If you can't get a prebaked pizza crust, season the dough and bake it to within 10 minutes of doneness before topping and grilling.

Ingredients:
1 10-inch prebaked pizza crust;
4 potatoes;
2 onions, sliced;
2 cloves garlic, chopped;
2 thick slices raclette;
1/4 of a lemon;
2 tsp dried oregano;
2 tbsp olive oil plus more for drizzling;
salt, fresh black pepper

Method:
Bring the potatoes to a boil and simmer for 20 minutes, until fork tender. When the potatoes are done, let them cool and cut into 1/4-inch thick slices. Meanwhile, saute onion slices and 1 tsp of oregano with 2 tbsp olive oil, slowly over medium-low heat, until translucent (about 15 minutes).
Drizzle the crust with olive oil. Season with salt, pepper, and oregano. Sprinkle with garlic. Top with slices of potato and tear the raclette over. Distribute the onions evenly over the potatoes and cheese.

Grill on medium-low heat for about 5 - 7 minutes, then shut the grill off and allow the pizza to sit with the lid closed for another 5 minutes or until the cheese is melted and the pizza is browned and crisp. (Keep an eye on the pizza and move it to the top rack if the bottom is browning too quickly). Drizzle with olive oil (optional), season with salt and pepper, and squeeze over the 1/4 lemon -- serve right away!

Serves 2 very lucky people.
