Try this on for a light breakfast:
1 egg white
3 slices lean turkey breast, torn into pieces
1/2 head endive, sliced thin
handful fresh basil
salt, pepper
Put the turkey breast into a hot, non-stick pan and allow to turn slightly brown, stirring for 1 minute. Add the egg white and stir until just cooked. Transfer to a warm plate. Make a pile of endive slices next to the eggs and sprinkle a few over the eggs, along with the basil. Salt and pepper to taste.
Serves 1.
The endive was an interesting complement to the eggs and went well with the smokey turkey flavor. This makes a great breakfast or brunch dish served with a piece of toasted whole grain or root bread.
