New Idea for Chicken

Hi there

What was fresh and good yesterday? Fat whole chicken legs (with thigh). Rhubarb (yes, rhubarb). Red onions. Shallots. Fresh ginger. Green apples. New potatoes. Sage.

I've never cooked rhubarb before and I was soo pleasantly surprised. It has a sweet-sour taste.

This is what I did. I grated a thumb-sized piece of ginger and mixed in a little olive oil, chopped sage, salt and pepper. I rubbed it all over the chicken legs and let them sit a bit.

You wash the rhubarb and cut it into chunks. Throw them into a roasting pan. Peel 5 or 6 new potatoes, add to pan. Peel a green apple, cut it into chunks, and add to pan. Take a 3 or 4 small red onions, peel them, cut them in half, and add to pan. Peel 5 or 6 shallots, leave them whole, and add them to the pan. Now, slice up another handful of sage and throw it in the pan. Add a few squirts of olive oil, salt and pepper, mix up all the fruits and veggies in the pan. Put your chicken legs on top and roast in a 400 degree oven for about an hour to an hour and 15 minutes.
The chicken will be nice and browned, the rhubarb and apple will have melted into a lovely sauce. Your onions will be soft and wonderful.
