Recipe idea

This could be a replacement for the oysters :
The type of vegetable that's freshest here and most plentiful is the mushroom. What if I did crimini mushroom caps stuffed with something like an apple, shallot, and lemon zest mixture? I could serve a tiny scoop of smooth mashed (either potato or celeraic, which tastes like a potato with a hint of celery) next to it. I'd squirt some type of balsamic or other sauce around the plate with some fresh lemon thyme. Any ideas? Wasabi balsamic? Maybe an apple cider vinegar reduction?
