
I found an enormous mushroom at my local vegetable market. I had to buy it -- it was just so huge! This was definitely "single serving" material.
Now, what do you have in your kitchen? Maybe you have a few green peppers, like I had, those Italian grilling peppers that taste so nice under a high heat. Chop them up with a few cloves of garlic, a shallot, and the mushroom stem. Don't even bother to sautee the mix. Chop, mix, season, and stuff the mushroom -- put it under a high heat (broiler or grill) for about 15 - 20 minutes. Towards the end, grate a bit of parmesan over. Tear off a piece of crusty bread, put the mushroom on a hill of sturdy greens ... dinner is served.
