Summer Salads

The weather in Europe is yo-yoing at this time of year. There are, however, small stretches of consistent sun and warmth that leave you craving foods that are light and...well, summery. I like mixing the market's seasonal fruit offerings into savory salads. Here are two:

Arugula with Strawberries, Red Grapes, Mint and Red Onions:

Chicken Apple Salad with Green Grapes, Radishes, and Hazelnuts:

Both are laced with Jamie Oliver's Thick Mustard Dressing:
6 tablespoons EVOO
2 heaped tablespoons Dijon mustard
1 heaped tablespoon wholegrain mustard
2 tablespoons white wine vinegar
sea salt and freshly ground pepper
