Chicken breast is a simple yet wonderfully versatile and even elegant food. "Pfffhhh", you say ... "there is nothing elegant about chicken breast, I eat it all the time".
If you're a beginner cook looking to impress, or someone with limited time, consider the following:
Chicken doesn't overpower; it allows flavors to build upon it and with the proper seasoning can accent the most subtle flavors. It can also stand up to bold flavors, the saltiness of olives or prosciutto, the sweetness of fruit. Not only is it inexpensive and readily available in some shape or form practically everywhere, there are hundreds of simple ways to prepare it. And, if you didn't already know it, it's healthy.
